Looking to bake a tiered cheesecake, or maybe a torte? Use these springform pans from Kaiser Bakeware, which are made in graduated sizes of 8, 9, and 10 inches. The pans are constructed of heavy-gauge tin-plated steel, a high-performance baking material that consistently browns cakes without burning them. The pans also include a waffle base to hold butter--a must not only for terrific flavor, but to guarantee a clean release from the surface. The tin-plated surface, which heats evenly, is strong enough to resist bending, and its springform buckle releases quickly.
